RECIPE: Savory Tomato Jam
This is a perfect recipe when you’re looking for a way to use up an abundance of tomatoes and don’t feel like making a traditional sauce. Play around with this dish by adding different spices (like curry powder, basil, paprika, etc). You can use this as an add-in for sandwiches, a sweet component for pizza, or as the base for prosciutto toast (like you’ll see in the picture).

Time: 90 minutes
Ingredients
4 1/2 cups chopped tomatoes (can used canned)
2 cups granulated sugar
1 cup apple cider vinegar
1/2 teaspoon red pepper flakes (or more to taste)
1/2 Tablespoon Salt
Directions:
Add all the ingredients into a pot and bring to a boil, stir often to avoid scorching at the bottom of the pan.
Reduce to a simmer and cook for an additional 40-60 minutes or until the jam has thickened and is glossy. Continue stirring to avoid scorching! To test for doneness, Take a spoon, dip it in the sauce and turn it over with the back of the spoon facing you. Carefully run your finger down the spoon. If you end up with a clean line down the middle, your sauce is ready. If the mixture drips through the line, continue cooking.
Pour the hot jam into clean jars and allow it to cool at room temperature. When chilled, taste and adjust seasoning as needed.
