RECIPE: Caesar Dressing

An untraditional look at the traditional Caesar salad dressing. This recipe uses sour cream for an extra tang, and soy sauce to add saltiness and a little umami without using anchovies and worcestershire sauce. Pair this dressing with a heapful of romaine lettuce, some vine ripened tomatoes, an extra handful of grated parmesan, herbed croutons and an extra pinch of pepper.

Yield: 1 1/3 cups

Time: 10 minutes

Ingredients

  • 2 small garlic cloves, minced

  • 2 teaspoons soy sauce

  • 2 tablespoons freshly squeezed lemon juice, about 1 lemon

  • 1 teaspoon dijon mustard

  • 1/3 cup mayonnaise, good quality

  • 2/3 cup sour cream

  • 1/2 cup freshly grated parmigiano-reggiano, good quality

  • salt to taste

  • 1/4 teaspoon freshly ground black pepper, plus extra for serving

    Directions:

  • Whisk the ingredients together in a bowl (or use a blender) ensuring everything is thoroughly combined.

  • Chill in the fridge for at least 1 hour to allow the flavors to build. Taste and adjust seasoning as needed before serving.
