Sipping the Holidays: Coquito
What better way to usher in the holiday spirit than with a sip of Coquito, Puerto Rico’s answer to Eggnog. This tropical holiday drink is a creamy coconut based drink that goes great on it’s own, with a splash of Ron del Barrilito, or even as a sweet creamer in your coffee. Whether you’re gathered with loved ones or enjoying a quiet moment by the fireplace, this holiday classic is sure to warm your heart and tantalize your taste buds.
Coquito (Serves 6-8)
ingredients:
1 can (12 oz) evaporated milk
1 can (14oz) sweetened condensed milk
1 can (15 oz) coconut cream
1 can (15 oz) coconut cream Coco Lopez
1/4 tsp Cinnamon
1/8 tsp nutmeg
1 tsp vanilla
1 pinch kosher salt
1.5 cup dark rum (I like Ron del Barrilito) *optional
directions:
Mix all ingredients in a blender at high speed and pour into a beverage container.
Chill in the fridge for at least 1 hour.
Shake or stir well before serving. Serve over ice or in your coffee. Some of the coconut fats may solidify, you can allow the coquito to sit on the counter for a few minutes for the fats to melt back into the drink.
