White Nectarine Galette

I used to love sweet, sweet, SWEET desserts. As I’ve gotten older the idea of eating teeth hurtingly sweet treats has become less appealing, so I look to desserts that focus more on sugar from fruit rather than the a bag. Topped with a little ice cream or whipped cream, this treat is great with some coffee and great conversation.

 

Ingredients:--Crust (makes one shell)

  • 2 C flour

  • 1 ½ Tbsp Sugar

  • ½ Tspn Salt

  • ½ C (+ 2 Tbsp Vegan Butter)

  • 2 Tbsp Vegetable Oil

  • 3 Tbsp Cold Water

 

Ingredients:--Fruit Mixture (for one shell)

  • 4-5 small White Nectarines (about 9 slices per nectarine)

  • 1 Tbsp Flour

  • ¼ C sugar

 

Directions:

 

  1. Start with the dough for the crust. Combine flour, sugar, and salt into a large bowl. Cut in the vegan butter until crumbly.

  2. In a separate bowl whisk together the water and oil, then add to flour/sugar mixture. Mix until dough forms and flour is fully incorporated.

  3. Cover dough with plastic wrap and allow to chill in fridge for 30 minutes.

  4. While dough is chilling prepare fruit. In a small bowl, toss together nectarines, sugar and flour, and set aside.

  5. Preheat oven to 425 degrees

  6. When dough is ready, gently press into a pie tin allowing some overhang on the edges.

  7. Pour fruit mixture over the dough, spreading evenly.

  8. Fold the border of the exposed dough up and over itself at regular intervals, crimping and pushing it up against the fruit. Trim any excess dough.

  9. Place in the center of the oven and allow to bake 45-50 minutes until the crust is golden brown.

  10. Serve immediately or allow to cool. Either way, it goes great with ice cream!
