Strawberry Arugula Salad

I have to be honest...I’m not a huge fan of salads. In restaurants they’re usually overpriced, drenched in dressing, and loaded with calories. At home they’re usually made in an attempt of a diet so they’re lettuce heavy leaving me hungry and counting down the minutes until my next meal. Now with all that being said, trust me when I say this salad is delicious! It’s packed with flavor and is surprisingly filling; try it as a side or main dish.


Ingredients:--Makes about 8 servings

  • 1 pint strawberries, rinsed, hulled, and thinly sliced.

  • 4 Tb olive oil

  • ½ tsp pepper

  • 1 cup toasted slivered almonds

  • 4 Tb Balsamic Vinegar (divided)

  • ½ tsp Sea Salt

  • 4 bunches baby Arugula, washed, dried, and trimmed



  1. If you’re unable to find toasted slivered almonds, just toss in a nonstick pan over medium heat and stir until browned.

  2. In a large bowl, toss the Strawberries and ½ of the Balsamic

  3. In a small bowl whisk together remaining Balsamic, Sea Salt, Pepper, and Olive Oil. Add mixture to the strawberries.

  4. Add Arugula and Almonds to the Strawberry mixture and toss until thoroughly mixed.

  5. Enjoy!
