Fried Baby Artichokes
There is an italian restaurant near us that my husband and I love! It has a great menu with many delicious options. My favorite though has to be their steak and fried artichoke salad. It’s got a delicious balsamic vinaigrette and that coupled with the flavor of the steak and the crunchiness of the artichoke…...yum!! It’s on my list to recreate that salad, but for now I’ve recreated the artichoke. Try these artichokes as an alternative to chips, or on a salad, or even tossed with some buffalo sauce (that recipe is coming soon too!)
Ingredients:--Makes about 10 servings
20 baby artichokes (about 4 oz each)
Extra Virgin olive oil (for frying)
1 ½ C Cornstarch
1 ½ C Flour
In a medium sized bowl thoroughly stir together cornstarch, flour, and salt to taste.
With a small, sharp knife, cut off the artichoke stems. Snap off the leaves until you reach the inner leaves. Cut off the top third of the artichokes and trim any tough parts. Quarter the artichokes lengthwise.
Toss the artichokes into the flour mixture until thoroughly coated and set aside (toss extra mixture or make it a frying day and fry something else!)
In a medium saucepan heat 2 inches of oil to about 300 degrees.
Fry the artichokes in batches until golden and crisp. Drain on paper towels and season with salt/pepper to taste.
