Fried Artichoke

I love artichokes but I usually don’t purchase them because they’re often a little pricey and always a hassle to clean and prepare for eating. Also if you do a quick search of artichoke recipes online, you often get the same few suggestions (in a dip, in a salad, tossed in pasta). While those are all delicious ways I wanted to explore some other options, and this is what I discovered.


Ingredients:--Makes about 8 servings

  • Salt

  • Pepper

  • 4 medium sized artichokes

  • 6 C olive oil



  1. Trim the artichokes (check out this  video) and place into a bowl of water with lemon juice to prevent them turning brown. (The artichokes I used did not have chokes so they were easier to prepare)

  2. Heat oil in a deep thick pot over medium high heat (until oil is about 300 degrees)

  3. Pat artichokes dry and spread leaves out to allow oil to get through easier. Place artichokes in the oil face down and fry for about 10 minutes. If the oil is not high enough to fully submerge the artichokes, turn them every so often to ensure a thorough fry.

  4. Remove artichokes from the oil and allow to drain face down.  (I use paper towels on a plate) Flip over and salt/pepper to taste.

  5. Raise heat to high, allow oil to heat up further (until about 400 degrees). Then add the artichokes back and allow to fry for 3-5 more minutes until golden brown. Remove from oil and allow to drain again then salt/pepper again.

  6. I like to eat them as is, but you can serve with lemon, aioli, balsamic vinegar, whatever you like!
