Berry Marshmallow Bars

My husband and I are hosting a temporary AIRBNB while our previous lease runs out. Although it is only temporary, I of course am giving it my 100% when it comes to hospitality. As part of that we stock the place with snacks, drinks, etc. The last time I went to the store to restock, I found that my FAVORITE cereal was on sale. I told myself I was only going to buy it for the guests and that I would not allow myself to indulge...of course I was lying. After a few days of chomping my way through a few boxes of cereal, I decided it needed to go away and FAST. That’s how I came up with this sugary treat!


Ingredients:--Makes about 12 servings

  • ¼ cup unsalted butter (plus some for coating the pan)

  • 4 Cups miniature marshmallows (or large marshmallows cut up)

  • 4 Cups Kellogg’s Special K with Berries



  1. Coat a 9x13 inch pan with butter

  2. In a large saucepan, melt the butter over low heat. Melt the marshmallows into the butter, stirring. When the marshmallows have melted, turn off the heat and add the cereal; stir until coated. Quickly pour into the prepared pan. Use a sheet of waxed paper (or nonstick spatula) to press the mixture down flat and evenly into the pan.

  3. Allow to cool for a couple hours then cut into squares and serve.
