Bacon Wrapped Water Chestnuts

Here is another lovely recipe that I never would have thought of making if not for a client special request. The client I was working with absolutely adored this dish that her previous caterer had always made for her. Unfortunately that caterer had since passed away and my client had gone years without tasting her favorite dish.

Obviously knowing the significance of this dish for my client, I felt a lot of pressure to get this recipe right! It took a few attempts, and a few experiments with friends, but I can say I truly perfected this recipe. I can say that because when I presented it to the client, she said it was even better than she remembered. I think what truly brought this dish to that perfect flavor level was soaking chestnuts in soy sauce.

 
 
Bacon WRapped

INGREDIENTS

  • 1/4 C Brown Sugar

  • 2 tbsp Whole Grain Dijon Mustard

  • 10 strips Bacon, cut in 1/2 down the middle.

  • 8 oz can whole water chestnuts drained and rinsed.

  • 5 oz soy sauce

INSTRUCTIONS

  • Place water Chestnuts in a sealable container with soy sauce. Allow them to soak for at least an hour and up to 8 hours. If they are not fully submerged in soy sauce, just give the container a good shake every couple hours.

  • Preheat oven to 375 degree F.

  • Soak toothpicks in water as you prepare the other ingredients, this will ensure they don’t bur in the oven.

  • Mix together the brown sugar and mustard until combined and set aside.

  • Spread the sugar/mustard mixture evenly across the bacon strips.

  • Wrap each chestnut with a half bacon strip and roll it up, securing the bacon with a toothpick.

  • Place all the bacon wrapped water chestnuts onto a baking sheet and roast for 20 minutes until bacon has cooked through and looks crispy.

  • If you are making ahead, pull the water chestnuts out when the bacon has cooked through but is not quite crispy. Reheat in a preheated 375 degree F oven until bacon is crispy.

  • Serve hot and ejoy!
